Peach Crostini, Honey Ricotta, Coppa
Equipment Needed

Mixing Bowl
Ingredients Needed
5 pieces Baguette
1 Tb Olive Oil
1 Cup Ricotta
1 Tb Honey
Salt and Pepper to taste
1 Peach, cut into 8ths
5 slices Coppa
For the Crostini
Slice 5 1/2 inch pieces of baguette and toast them on medium heat in a pan, until golden brown on both sides.
For the Ricotta
Add the Ricotta into a mixing bowl. Add in the Honey, Salt and Pepper. Mix and adjust to desired flavor.
For the Plate
Add 1 Tb of the Ricotta mix onto each of the crostinis. Add the slices of peach on top, stacked. Finish by folding the coppa in half and wrapping around itself and place on top. Finish with a drizzle of olive oil.
