Fiore Di Carciofi, Buro Al Fuso, Shaved Artichokes

Equipment Needed

  • Pasta Pot

  • Sautee Pan

Ingredients Needed

  • 1 Fiore Di Carciofi

  • 2 Tb Butter

  • 1 tsp Lemon Juice

  • 1 Fresh Artichoke Heart, cleaned and shaved thin

  • 4-5 Parsley Leaves

  • 1 tsp Olive Oil

Method

Start by heavily seasoning the pasta water with salt. Add in the pasta and cook until it floats, then about another minute and a half after. Start with hot water in the sautee pan and bring to a boil, then add in the cold butter and stir until the sauce is emulsified. Season with salt and lemon juice. Toss the pasta with the butter sauce to coat. Plate with the pasta in the center of the plate, then drizzle the butter sauce on top. Finish with artichoke slices, parsley leaves, and a drizzle of olive oil.
