Equipment Needed

  • Pasta Machine

Ingredients Needed

  • 150 grams “00” flour

  • 125 grams egg yolks

Method

First, start by laying the “00” flour into a pile and make a well in the middle of the flour. Add the egg Yolks into the center and start whisking the eggs with a fork and slowly fold in the flour. Once the egg yolks and flour are combined, roll into a ball and knead for 8-10 minutes. After kneading the dough, cover tightly with plastic wrap and let rest for 20-30 minutes. After resting, roll in the pasta machine (my pasta machine goes from smaller numbers to higher) to a 7. Flour the pasta to make sure that when cutting, the pasta doesn’t stick to itself and slice even slices of about 1/4 inch. Flour again to stop the pasta from sticking and roll into a nest of Taglioni.
